You carved it. It looks good.
It is now a decoration, not an ingredient.
Once a pumpkin is carved, the open inside invites bacteria. Michigan State University Extension says a carved pumpkin that sits at room temperature for more than two hours is in the food danger zone and can be dangerous to eat. Daytime sun counts. A cool night does not undo a warm afternoon on the porch.
Let that pumpkin keep its job.
If you want to cook with pumpkin, buy another one meant for the kitchen.
Pie pumpkins are usually smaller, with thicker flesh. Carving varieties tend to have thinner walls and less flesh, making them easier to cut. You can eat a carving pumpkin that has not been cut open, but its flesh is generally tougher, stringier and less sweet than a pie pumpkin’s.
One is easier to turn into a face. The other is better to turn into dinner.
The seeds can come from either.
Save them while you carve, when the pumpkin is fresh. Seeds from either kind can be cleaned and roasted for a snack.
Separate them from the stringy pulp. Clean them, spread them on a baking sheet, and toss with a little oil and salt. Roast according to a reliable recipe. Eat them on their own, or scatter them over soup or salad for crunch.
That is a good part of carving to keep.
And the pumpkin you bought for the kitchen does not have to become pie.
Cook it as you would another winter squash: roast, steam or boil it, then use the flesh in something sweet or savory. Soup, risotto or a filling for ravioli all give it somewhere else to go. Freeze extra purée for another day.
You do not have to turn every part of Halloween into a cooking project. But you can choose what belongs where.
A face for the porch. Seeds for a snack. A separate pumpkin for something you want to eat.
We cook from scratch so dinner does not have to be another task on carving night. Save the seeds, finish the face, and let us take care of the meal.
Buy two pumpkins if you want to carve and cook.
One for the porch. One for the table.
